In a Besen- or Straußwirtschaft, the winemaker himself usually stands behind the counter and tells one or two anecdotes about the wine. Traditionally, these taverns are only open when the broom or bouquet is hanging outside, usually depending on the weather. Nowadays, this custom is no longer taken quite so strictly and the opening hours can usually be found online. Smaller dishes to go with the wine are often served as well.
